Garden Fresh Tabouli

The garden is flush with greens right now so we are always trying to come up with delicious & healthy ways to use them all up. This recipe is a great way to use all the parsley & mint we have growing in the garden.
Traditionally, tabouli uses bulgar as the grain but lately, here at the farm, we have been using quinoa in its place for a little extra protein and nutrition. This nourishing side dish has a fresh flavor that makes "getting your greens in" no trouble at all.

Garden Fresh Tabouli

 1cup cooked quinoa (cooled)
1 1/2 cup fresh parsley, minced
2/3 cup fresh Mint, minced
1/2 cup fresh onion, chopped
1/3 cup diced tomatoes
3 tbsp lemon juice
3 tbsp olive oil
salt to taste

Add all ingredients together in a large bowl, toss to mix well, serve. Can be made ahead of time and refrigerated.

Sauteed Sweet Potato Greens

Here on the farm we have sweet potato plants all over lining the pathways. Most people are familiar with their deliciously sweet tubers but many are surprised to find out you can also eat the greens of this plant. Not only are they tender & pleasantly mild in flavor, but they also have some great health benefits as well, such as helping to prevent prostate cancer. The greens can be used in salads, soups, smoothies, etc. Anywhere you can use spinach you can also use sweet potato greens.
Here on the farm, one of our favorite ways to use this versitel green is to sautee them. Here is a quick, easy, & tasty recipe to get you started with these wonderful greens.

Sauteed Sweet Potato Greens
3 cups packed sweet potato greens
2 cloves of garlic, minced
1/3 cup diced onions
1 tbsp olive oil
salt to taste
Heat oil in pan on med-high heat. Add onions and saute for 3 min. Add garlic and continue to saute for 2 more min. Add in the greens, stirring occasionally for 8 min or until the greens wilt. Add salt to taste, serve hot.

Remembering Ulani

402636 10150498772544624 162817399623 8901008 1160871947 nEarlier this week we lost our dear friend, Hana resident, & past Hana Farms resident in a tragic car accident. Ulani, you will be dearly missed by all of us here on the farm, the entire community of Hana, & every one whos life you have touched.

We are devastated to lose her. We take comfort in knowing that she is with her husband ‘Big Guy’ now.
Ulani thank you for being our farm auntie, for living with us and for sharing so much laughter, love and wisdom with your friends and kids here on the farm. We will build the Hale that you were working so hard to build and make you proud Ulani, we know you will guide us. Thank you for bringing people together, to “join hands“ as a community. Life will not be the same here in Hana without you. We had so many moments left to share with you. And so until we meet again our sweet Ulani we will always remember your love for everyone and the joy you shared with us.

She was already ethereal before you knew it, all over the map and pinpointedly here, this woman was a kind of weather, coming in with the wind, an artist ready to blow, she had names for all her knives, she wanted you to help her help the world...I remember her vividly, I kissed and hugged her today, I thought I knew what time was capable of, and I was surprised to hear it cut itself while I was away. You are on the breeze now, Ulani, and I can breathe with you now. You will alight the alive. You will keep me honest and happy, a piece of you here in my chest, a beautiful bubble curled up with my heart. Thank you thank you thank you...we'll build that hale in heaven-"

We are blessed to have had you in our lives, Ulani.
